Chicken and hot sausage po boys

Hey all, now that I've gotten over the blunder that happened on my phone yesterday, I'm back :-). Hopefully it doesn't happen again because I prefer to blog from my phone it's just more convenient most of the time.

Well I made these bad boys for dinner today and it was a pretty healthy recipe and still yummo. it's my version of a healthifed po boy.

I got the idea to make it because I'm trying to use everything I have in my pantry and fridge first before I go grocery shopping again. Since the two are getting pretty bare I thought this up at the last minute. So I apologize in advance for not having instructional pictures as it was a rush to make dinner before the hubs came home.

The baguette I made is as follows.

Ingredients
1 pkt instant yeast
1 1/2 cups warm water
2 tablespoons olive oil
1 tablespoon smart balance buttery sticks or butter
2 cups whole wheat flour
2 cups white flour
Season according to your taste but I used approx
2 tbs garlic salt
2 tbs onion powder
1 tbs Maggi chicken bullion granules
1 tbsp dried basil
1 tsp Italian seasoning

Directions:
Dissolve yeast in water, I add a pinch of sugar, and let rest about 5 minutes or until it begins to foam.

Stir in all seasonings, oil and half of the flour.

Gradually add remaining flour, mixing well.

Knead 8-10 minutes or until smooth and elastic.

Place in greased bowl and let rise until double (1/2-1 hour) Punch down and let rise again until double.

Punch down and divide into 1-4 pieces, depending on the size loaves desired.

Roll into an oblong shape into 6-8 mini loaves

Place on greased cookie sheet.

Slash top of dough with knife 3-5 times diagonally down each loaf.

Brush with water and let raise till double again (about 1 hour).

Bake at 375°F for 30 minutes.
Once cool slice in half for sandwich.

They are best to Use within one day or double wrap and freeze.


(I rarely measure seasonings exactly, it's just the way I cook :-/)

Filling
Ingredients:
4 boneless skinless chicken thighs cut into bite sized pieces
About 4-6 ozs smoked turkey sausage sliced
4 ozs ground turkey sausage
2 jalapeƱo or Serrano peppers sliced
1 small onion
Hot adobo seasoning
Tony chauchers seasoning
Low sodium Seasoning salt
Lots of Cayenne pepper
Onion powder
Garlic powder
Roasted cumin
Smoked paprika
Cajun seasoning

Sandwich garnish:
Reduced fat American cheese
Kraft olive oil mayo
Fresh baby spinach
Sliced jarred jalapeƱos

Directions
Season All 3 meats with spices listed. I recommend about 1-2 tbsp of each depending on your taste.( I put very low amounts of seasonings that contain salt because I have high blood pressure.)
Add 2 tbsp of olive oil and 1 tbsp of smart balance butter sticks to a cast iron skillet or any skillet. Add all ingredients and cook on medium high until the chicken is done and the sausage is browned and crumbled.

Put mayo on bottom bun and add filling and garnish with remaining toppings .

Serves 4-6

It may seem like a complicated recipe but it really doesn't take long and since the bread may take hours rising three times you may save time by buying pre made baguettes! enjoy!!!
